PROBLEM TO BE SOLVED: To provide a method for producing bread which uses inexpensive whey protein capable of being substituted for powdered skim milk and has excellent texture and flavor. SOLUTION: This method for producing the bread, comprising a process for preparing bread dough from bread raw materials containing wheat flour and a process for baking the prepared bread dough, is characterized by involving a process for adding the whey protein filtered through a nanofiltration membrane in the process for preparing the bread dough. In the process for adding the whey protein, the protein is added in an amount of 2 to 5 wt. % based on the wheat flour as bread raw material. COPYRIGHT: (C)2004,JPO
