<P>PROBLEM TO BE SOLVED: To keep solubility of heme iron without causing aggregation and precipitation of heme iron even in an acidic area. <P>SOLUTION: The acid heme iron-containing food or beverage comprises at least two or more kinds of materials selected from a group consisting of pectin, carboxymethyl cellulose sodium and soybean polysaccharide. In the food or beverage, the amounts of the pection, carboxymethyl cellulose sodium and soybean polysaccharide added to the heme iron are each 10-100 wt.%, and the pection is preferably a high-methoxy pectin and the heme iron is preferably a water-soluble heme iron. <P>COPYRIGHT: (C)2004,JPO |
