PURPOSE: Provided is a production method of an low-cholesterol egg using an eggplant extract as a feed additive for laying hens to decrease cholesterol level in the serum of a laying hen and the yolk of a produced egg. CONSTITUTION: A production of a low-cholesterol egg using an eggplant extract is characterized by extracting an eggplant with hot water to give an egg plant extract which contains excellent matters lowering cholesterol level, and feeding the extract to a laying hen to give a low-cholesterol egg.
