<P>PROBLEM TO BE SOLVED: To provide astaxanthin-containing coloring matter oil having high stability and good quality. <P>SOLUTION: The astaxanthin-containing coloring matter oil contains astaxanthin as a principal coloring matter component, of which the concentration is preferably not less than 400 ppm, obtained using a crustacean, preferably a krill as a raw material and contains a fatty acid ester and a free fatty acid as a principal fatty component so that the content of the fatty acid ester is preferably not less than 40% and/or the content of the free fatty acid is not less than 10%. The coloring matter oil is manufactured by subjecting the crustacean, preferably the krill to fermentation treatment and compressing the fermentated one to fractionate and float the coloring matter oil. The fermentation treatment is one of lactic acid fermentation, koji fermentation and yeast fermentation or a combination of two or more of them. <P>COPYRIGHT: (C)2004,JPO |
