摘要 Modification of the constituent composition of plant products, especially fruits such as sultanas, sea buckthorn, apple berries or cranberries, makes use of the osmotic pressure gradient between the plant product interior and the surrounding solution of constituents which have diffused out of the product, while at the same time reducing the amount of the constituents such that an effective osmotic pressure gradient can be maintained. An Independent claim is also included for glucose-reduced sultanas obtained by (1) mixing 10-30 wt.% sultanas with water as solvent; (2) diffusing sugars such as glucose, fructose and saccharose into the solvent while simultaneously causing degradation by addition of glucose-degrading or -reconstructing enzymes and/or glucose-metabolizing microorganisms and diffusion of the solvent and partially also of the enzyme into the sultanas; (3) mixing the separated-off, glucose-reduced sultanas with a diabetically-acceptable sweetener solution to bring about diffusion into the sultanas; and (4) drying the separated-off glucose-reduced and sweetened sultanas
