摘要 PROBLEM TO BE SOLVED: To provide a non-browning aspergillus oryzae useful for the brewing of Japanese sake, enabling the separation and breeding without using a mutagenetic agent and enabling preferential growth of exclusively the objective mutant strain to facilitate the separation of the strain. SOLUTION: A practical aspergillus oryzae strain having low tyrosinase activity is produced by applying a liquid suspension of aspergillus spores on a medium (niaD mutant strain selection medium) for the selection of niaD mutant strain of Aspergillus oryzae (a nitrate non-assimilating aspergillus mutant strain: Nitrate Reductase deficient strain) and separating the formed colony. The colony is confirmed to be the objective strain by applying the colony to a spore-forming medium and confirming the formation of spores. COPYRIGHT: (C)2004,JPO
