<P>PROBLEM TO BE SOLVED: To obtain a lactic fermentation product of soybean having high immunoenhancing effect and good taste. <P>SOLUTION: Soybean or its processed product is fermented by the coculture of lactobacillus and yeast. The lactobacillus at least contains Enterococcus faecalis properly combine with other cocci, bacilli or bifidus bacteria. The yeast is Saccharomyces cerevisiae and/or Saccharomyces rosei. The fermented soybean is produced by fermenting soya milk with the above microorganisms and the produced fermented liquid is neutralized with a calcium compound and dried to obtain a powdery fermentation product. <P>COPYRIGHT: (C)2004,JPO |
