PROBLEM TO BE SOLVED: To provide a method for producing a lipid containing a highly- unsaturated fatty acid, giving the lipid at a lower cost than ever, by using a carbon source of a culture medium which is obtained at a lower cost than glucose, does not contribute to increase in osmotic pressure of the culture medium, and is assimilated by bacteria belonging to Mortierella genus (Mortierella bacteria). SOLUTION: This method for producing the lipid containing the highly- unsaturated fatty acid comprises culturing the Mortierella bacteria by using the culture medium containing saccharified starch and collecting the lipid containing the highly-unsaturated fatty acid from the culture.
