<P>PROBLEM TO BE SOLVED: To finish astringent persimmon whose defective sites such as wound sites are removed and which is sliced, into non-astringent dried persimmon having softness between that of Anpo persimmon and Koro persimmon. <P>SOLUTION: This method for producing the sliced dried persimmon is characterized by drying the sliced fruit pieces of the astringent persimmon in a pared state and then sealing the dried fruit pieces with a plastic film. The method for producing the sliced dried persimmon preferably comprises paring the sliced fruit pieces in a state partially leaving the skins, attaching hooks to the flesh portions on the insides of the left skins, hanging the fruit pieces in a drier and then semi-drying the hung fruit pieces, or wholly paring the sliced fruit pieces, arranging the pieces on a rack in a drier to dry, and then sealing and packing the dried fruit pieces with a film to perfectly remove the astringency. <P>COPYRIGHT: (C)2004,JPO |
