PROBLEM TO BE SOLVED: To produce monoterpenes from sweet potatoes. SOLUTION: This method for producing monoterpenes from the sweet potatoes is provided by selecting sweet potatoes containing≥30μg/L, preferably≥100μg/L content of 1 kind of a single compound among the monoterpenes, and≥60μg/L, preferably≥1,000μg/L total content of whole monoterpenes, and collecting the monoterpenes. As the sweet potatoes, the sweet potatoes suffered from a stress, e.g. the sweet potatoes having received≥1 stress selected from the pest damage and parasitism by vermins, infection with pathogenic bacteria, bruise, cut, damage, frost, snow, storage, refrigeration, freezing and degeneration by a chemical, are suitable.
