PROBLEM TO BE SOLVED: To provide a fryer which discharges a waste oil in an oil tank efficiently at a suitable temperature. SOLUTION: The oil stored in the oil tank 1 is heated to a high temperature by a heating part 2 in the case of frying work. When discharging the oil heated to the high temperature from the inside of the oil tank 1 to a waste oil tank 7 after the end of the frying work, the temperature of the oil in the oil tank 1 detected by a temperature sensor 3 is compared with a waste oil setting temperature stored in advance by a control part 6 and when the temperature of the oil is lowered equally with or rather than the waste oil setting temperature, a motor 5 is controlled to be driven for opening a waste oil valve 4 provided on the oil tank 1.
