PROBLEM TO BE SOLVED: To provide an improved dehydration method for organic sludge by adding an organic polymeric flocculant to organic sludge high in the content of oils and fats to flocculate the organic sludge and subjecting the flocculated matter to solid-liquid separation treatment to dry the same. SOLUTION: The flocculant is added to organic sludge containing oils and fats and this organic sludge is dehydrated by a dehydrator after flocculated flocs are separated. In this dehydration method for organic sludge, an iron or aluminum type acidic inorganic flocculant is firstly added to the organic sludge as the flocculant, and an anionic organic polymeric flocculant is subsequently added to the organic sludge, and an amphoteric organic polymeric flocculant is added to the organic sludge thirdly.
