PURPOSE:To provide a method for culture of a new strain of Lyophyllum ulmarium whose bitter taste of even basidiocarp cultured in a highly bittered medium is only slight when the strain is used in food materials. CONSTITUTION:Such a new strain of Lyophyllum ulmarium whose bitter taste of even basidiocarp cultured in at least one kind of highly bittered media is only slight is inoculated into a medium to carry out culture of the mycelia or basidiocarp. The highly bittered medium means such a medium that the bitter taste of basidiocarp produced by artificial culture of Lyophyllum ulmarium Lu 1-2 (FERM P-12584) is determined as at least being bitter by sensory test. By this method, Lyophyllum ulmarium basidiocarp and mycelia with reduced bitter taste can be provided in high yield. |
