发明名称 BLACK CANDY AND METHOD FOR PRODUCING THE SAME
摘要 PROBLEM TO BE SOLVED: To provide a black candy having smooth and lustrous surface without unevenness, and providing not only beautiful appearance but also smooth texture. SOLUTION: This black candy is obtained by cooking a black candy dough consisting essentially of muscovado, sugar and starch syrup, forming the cooked black candy dough, and remelting the surface of the formed black candy at a posttreatment step to form a surface-treated layer. The black candy has the surface-treated layer having≥7μm thickness from the surface formed by the remelting, and smooth surface without the unevenness. The a* and b* values in even perceptual space of the color defined by L*a*b* color system obtained by measuring the surface by a color difference meter are -1 to 1 and -3 to -2 respectively.
