The tunnel (1), to cool or heat or dry foodstuffs and especially as a cooling channel for confectionery, has a lower section (14) with a base plate (2) and a metal hood (3). The hood is attached to the lower section at both sides, by release fittings, so that is can swing upwards from either side to give access to the tunnel from each side. A release mounting/lock (11) links the hood to the lower tunnel structure at one side and, at the other side, a mechanical or pneumatic lifter (17) raises the hood and prevents it from falling down.
