PURPOSE: Provided is a method of preparing Worcester sauce which directly contains autolytic enzymes of raw materials, and has rich and delicious taste and flavors. CONSTITUTION: A method of preparing Worcester sauce comprises the steps of: fermenting and maturing bases-I, II and III by autolytic enzyme fermentation; sufficiently mixing 40kg of the base-I, 22.5kg of the base-II and 34kg of the base III together with 1kg of clove, 100g of rosemary, 48kg of starch syrup, 7.5kg of sugar, 13.5 liters of vinegar, 1 liter of lemon juice, six bottles of hot sauce, 0.6 liter of caramel and 4kg of salt; heating and sterilizing the mixture at 121 deg.C for 30 minutes; and filtering and rapidly cooling the mixture. |
