<P>PROBLEM TO BE SOLVED: To provide a gel-like food of a type gelling by cooling using hydrocolloid, having a smooth palate and excellent custard flavor. <P>SOLUTION: The method for producing the gel-like food comprises heating a first raw material liquid containing yolk, sugar, milk protein, fatty acid ester of glycerin, and citrate and/or phosphate, and thickening polysaccharides for gelling, crushing the resultant product to obtain a crushed material, obtaining a second raw material liquid through adding hydrocolloid gelling by cooling to the crushed material and cooling the second raw material liquid for gelling. <P>COPYRIGHT: (C)2003,JPO |
