<P>PROBLEM TO BE SOLVED: To provide the sliced meat product of old chickens, capable of being eaten as a chicken meat product having a good tooth touch, fully containing a gravy and having a good taste from the extremely low commercial value- having meats of the old chickens. <P>SOLUTION: This thinly sliced meat product of the old chickens is characterized by using the commercial value-free meats of the old chickens not having laid as raw meats, uniformly dusting a meat adhesive such as transglutaminase on the raw meats, piling the meats in a mold, pressurizing the piled meats from the upper side for a prescribed time, and then thinly slicing the obtained molded product having the prescribed size. <P>COPYRIGHT: (C)2003,JPO |
