In an automated process to bake spiral-wound ('Swiss Roll') puff or flaky pastry cases subsequently filled with an edible substance, the pastry is first mixed from ingredients on an industrial scale production line and rolled out in an elongated 500 mm-wide strip of approx. uniform 3 mm thickness. A filling is then dispensed and spread along one side of the pastry by a dosing dispenser. The coated pastry is continually and automatically rolled into a continual spiral form which is then cut into equal regular 500 mm - 800 mm lengths. The individual lengths are then pre-cooled (external temperature -5 deg C, internal temperature -3 deg C) in a freezer, such that they retain their shape when further sub-divided. The pre-cooled individual lengths are placed on a feed guillotine cutter and individual regular short slices 15-20 mm cut from the lengths which are then frozen and packed. Also claimed is a commensurate assembly.
