PROBLEM TO BE SOLVED: To provide a method for manufacturing yeast for frozen bread without using chemical materials of a fermentation accelerator, an emulsifier, a flavor or the like, and by using natural yeasts. SOLUTION: The method for manufacturing yeast for frozen bread comprises the following: a process in which >=3 kinds of natural yeasts are mixed with sugar and water; a process in which the juice of the mixture of the previous process is added to flour and a powder of starch having properties different from the flour to produce the first dough; a process in which the first dough is mixed with flour and water to produce the second dough; and a process in which the second dough is mixed with flour, water, and grated radish, and the mixture is aged, followed by freezing. This method needs no addition of chemical synthetic materials of a fermentation accelerator, an emulsifier (a fatty acid ester, a fatty acid glycerin or the like), an enzyme or the like, and the frozen yeast for bread can be manufactured without losing the activities of natural yeasts.
