摘要 PROBLEM TO BE SOLVED: To provide a method for producing seasoned devil's tongue jelly which maintains usefulness as devil's tongue jelly, has the seasoned taste, and can thereby facilitate the intake of edible fibers, while conventional devil's tongue jelly can deliciously not be eaten, because of needing a long time and a high cost for soaking a seasoning taste and further requiring a seasoning cooking, has a difficult point that the devil's tongue jelly is shrunk to a volume of 70% on cooking, because >=90% of the devil's tongue jelly is water, and is generally cooked by a cooking method for seasoning only the surface of the devil's tongue jelly, because it is impossible to soak the seasoning in the inner portion of the devil's tongue jelly. SOLUTION: This method for producing the seasoned devil's tongue jelly comprises preparing lime water with stirring, adding devil's tongue powder containing alkali-resistant seasoning powder to the lime water, charging the obtained gel in a cooker, and then thermally cooling the gel as shown in the Fig. 2.
