The fruit drying storage method for fruit (9) in air permeable crates involves forming an air permeable enclosure using the crates and connecting an air aspiration chamber (19) to one wall of the enclosure. The air aspiration chamber causes an airflow through the wall to an exhaust so that a dry airstream passes over the fruit. An Independent claim is included for a drying installation using the method.
