PURPOSE: Provided is a process for pear and preparing red pepper paste(kochujang, Korean native name) by adding starch sugar to pear puree and mixing the obtained syrup with fermented bean paste powder(meju powder), bean powder, red pepper powder, radish juice, garlic juice and ginger juice. Therefore, the prepared pear and red pepper paste has enhanced functionality, palatability, sanitation and storageability as well as color, flavor and physical properties. CONSTITUTION: A pear is ground and heated to produce puree. A suitable amount of water is added to malt powder(yotkirum) and saccharified with bean powder and corn flour to produce starch sugar. The starch sugar is mixed with the puree and then heated to produce syrup. The syrup is mixed with fermented bean paste powder(meju powder), bean powder, red pepper powder, radish juice, garlic juice and ginger juice and then aged. |
