PURPOSE: Provided is a manufacturing method of bean sprouts by using a fermented ginseng extract, thereby manufacturing high quality of bean sprouts containing abundant ginseng components beneficial to a human body. CONSTITUTION: The manufacturing method of bean sprouts by using a fermented ginseng extract comprises the steps of: pulverizing ginseng into an appropriate particle size; inserting the pulverized ginseng with 30% of an alcohol solution, anaerobic enzymes and molasses into a pot; fermenting it in the shade; soaking soy beans in the fermented ginseng extract for 1 hour; germinating and growing them; washing bean sprouts with purified water then soaking them in a sterilized mixed solution of the fermented ginseng extract and water for 1 minute; and drying and packing them. |
