The present invention relates to a glycogen polysaccharide and to a process of preparing the same. The glycogen polysaccharide has a nitrogen content less than 60 ppm, determined by Kjeldahl method, and a content of reducing sugars less than 0.25%, determined by the method of F.D. Snell and Snell. The process of preparing the glycogen polysaccharide consists in that the pH of the aqueous solution, resulted by dissolving the precipitate in water, is adjusted to neutral value, then the solution is treated with a cationic resin, filtered for separating the cationic resin, treated with an essential water-miscible non-acid solvent for precipitating the polysaccharide without nitrogen compounds and reducing sugars and, finally, filtered for recovering the formed precipitate.
