<p>A liquid coolant (13) is employed, in a tank (9) containing the refrigeration circuit (14), which is connected to refrigeration equipment (15). The remote upper end (16b) of the condenser pipe is connected to an extraction system (17), whilst its lowest point (16e) in the tank, is connected to a condensate drain (19). An Independent claim is also included for an oven. Preferred Features: The thermally insulated tank has a cover through which the remote end of the condenser pipe passes and on which the extraction system is mounted. The condenser pipe entering the tank has a straight-line course down to the base, from which it rises helically to the remote end. Refrigeration keeps the coolant (13) at 8-12 degrees C, preferably 10 degrees C. The oven is connected through a stop valve (7) and a pipe (6) to the condenser. Refrigeration power and coolant temperature are designed to permit continuous operation, taking into account the high temperature of the previous cooking and condensation cycle.</p> |
