PROBLEM TO BE SOLVED: To obtain a cryophilic enzyme-producing mold capable of effectively using wheat starch lees as a culture medium. SOLUTION: This cryophilic enzyme-producing mold consists of the strain KA-616 obtained by being isolated from molds separated and preserved from the Antarctica, grows by solely digesting fibrous materials comprising hemicellulose and/or cellulose as a main component as a carbon source and specifically has an ability to produce a cryophilic enzyme.
