NEW GLUTAMINASE AND METHOD FOR PRODUCING THE SAME

PROBLEM TO BE SOLVED: To provide a new glutaminase having a new property, to determine its amino acid sequence and gene sequence derived from the same, to prepare a transformant into which the gene was transduced, and to provide a method for producing the glutaminase by culturing the transformant. SOLUTION: A new glutaminase was obtained from a microorganism (Aspergillus oryzae strain KBN616 or A. sojae strain BA-104). A specific amino acid sequence encoding the enzyme or modified sequence and a gene sequence were determined to prepare a transformant into which these were transduced.
