<p>The invention concerns a device both for racking wine from a container (5) of a liquid (5) liable to be spoilt in contact with air and for preserving the non-racked liquid with an inert gas, the container comprising an orifice for introducing the inert or equivalent gas and another orifice for allowing through a racking pipe (6) immersed in the liquid to be racked (5) and emerging outside the container. The gas is introduced into the container under racking pressure which is higher than atmospheric pressure by a pressure difference required for evacuating all the liquid contained in the container through the racking pipe. The non-pressurised inert or equivalent gas is contained in an interchangeable vessel (3) with a useful volume not less than the volume of the container, the vessel (3) being connected to a water source (4) whereof the pressure is equal to the racking pressure so that the gas is injected into the container (2) as the water replaces and pressurises the gas in the vessel (3).</p> |
