PURPOSE: Provided are methods for separating and purifying water soluble protein and phospholipid from egg yolk including IgY by treating 5% of ammonium sulfate and distilled water, thereby increasing food safety and decreasing production cost. CONSTITUTION: The method for separating water soluble protein and phospholipid from egg yolk including IgY are characterized by diluting egg yolk with distilled water then adding 3-10%, preferably 5-6% of ammonium sulfate to separate water soluble and phospholipid, wherein the dilution rate is 1:1. The purifying method of the separated water soluble protein and phospholipid is characterized by diluting the separated solution with distilled water then precipitating it at predetermined temperature. |
