<p>PROBLEM TO BE SOLVED: To provide a method for preserving fruits/vegetables enabling their freshness to be retained through modified atmosphere effect enabling them to be prevented from discoloration, withering, putrefaction, pore development after ripening and from content ingredient decrease. SOLUTION: This method for preserving fruits/vegetables comprises preserving them in a packaged form at a temperature T( deg.C) satisfying the relationships: 0<T<=25, P>0, and a×log(P+b)-c<=T<=a×log(P+b)-(d) (wherein, P is the oxygen permeability of the package: cc/100 g/day/atm; (a), (b), (c) and (d) are each a constant determined depending on the kinds of the fruits/vegetables).</p> |
