PURPOSE: Provided is a manufacturing process of sausage using chicken. Therefore a user can take chicken flavored sausage easily regardless places. CONSTITUTION: The manufacturing method comprises the steps of: mixing 80.38-80.40% of chicken meat, with auxiliary ingredients including 2.17-2.19% of refined salt, 0.43-0.45% of phosphates, 0.06-0.07% of L-sodium ascorbic acid, 0.64-0.66% of L-sodium glutamate, 2.39-2.41% of glucose, 2.39-2.41% of powdery taffy, 1.63-1.65% of white compound seasoning, 2.17-2.19% of carrots, 1.90-1.92% of green peppers, 2.72-2.74% of dry whole milk, 0.21-0.23% of Solusmoke special, 0.05-0.07% of seasoning J-M, 0.54-0.56% of carrageenan, 1.08-1.10% of wheat protein and the like, in a predetermined mixing ratio; heat-treating the mixture and cooling it with cold water to 15 deg.C for 5-10 minutes; spraying sterilizing solution thereto and drying it; and vacuum-packing it by 10kg. |
