SUBSTANCE: apparatus has mixing reservoir and disperser composed of casing and supersonic emitter with wave guide resonance transformer connected to casing in planes of oscillatory shift nodes and equipped with water supply openings. While emulsion phase is supplied to transformer end surface it is preliminarily subjected to oscillating action of remaining surfaces of transformer. Emulsion obtained by means of such apparatus does not contain as phase emulsion of opposite type (presence of such emulsion causes orthokinetic coagulation stipulating decomposition thereof into basic components). Emulsion may be used for production of emulsion food products or it may be used as oil for baking equipment. EFFECT: simplified construction, increased efficiency and provision for obtaining emulsion having increased stability. 1 dwg
