PROBLEM TO BE SOLVED: To provide an apparatus and a method, for the evaluation of fruits and vegetables, wherein the fruits and vegetables in different sizes and shapes can be evaluated on a single conveyance line by solving the problem that, when the fruits and vegetables in different sizes and shapes are evaluated by a conventional evaluation apparatus for the fruits and vegetables, two or more conveyance lines are required, that the cost of the evaluation apparatus is increased and that the installation area of the evaluation apparatus becomes large. SOLUTION: By a plurality of light sources 4, a fruit or a vegetable 2a or 2b to be evaluated is irradiated with light. When the light sources are turned on and off, each fruit or each vegetable is irradiated at an optimum quantity of light. When an attachment 8 is used, the fruit or the vegetable in different sizes or shapes becomes stable on the conveyance line.
