Fragmented cross-linked starch (I) having a limited swellability is in the form of fragments of cross-linked starch particles having a weighted average particle size of the dry product of 1-1000 mu m. An Independent claim is included for a process for the production of the starch (I) by reaction of starch particles with a di- or polyfunctional cross-linking agent; processing of the cross-linked starch particles in the presence of no more than 30% moisture in an extruder using heat, pressure and shear force; and discharging at elevated temperature and pressure into a zone at ambient temperature and pressure with sudden escape of water vapor.
