METHOD OF TESTING FOR LEAKAGE

A heat exchanger assembly (40) includes a multi-section heat exchanger (42) with a first fluid pathway (44) for liquid to be heated/cooled, eg milk, and a second fluid path (46) for cooling/heating liquid. When clean-in-place fluid, acid or alkaline relative to the heating/cooling liquid is passed through the second path (44) the second liquid is recirculated via a bypass conduit (18). If there is a leakage this is detected by as a change in pH of the second liquid by sensors A to F. This permits leakage detection during the normal clean-in-place operation of the heat exchanger (42).
