PROBLEM TO BE SOLVED: To provide EVOH pellets which can be stably produced without adversely affecting the work environment and the surrounding environment and which can be rapidly washed and dried. SOLUTION: The process for producing ethylene/vinyl alcohol copolymer pellets is characterized in that a molten hydrous ethylene/vinyl alcohol copolymer composition containing 100 pts.wt. ethylene/vinyl alcohol copolymer, 0-10 pts.wt. alcohol having a boiling point of 100 deg.C or lower, and 10-500 pts.wt. water is extruded in strand form into a solidifying medium to solidify it and the solidified strand is then cut.
