摘要 <p>PROBLEM TO BE SOLVED: To provide a method for activating the freshness of perishables, comprising jetting a mixture of water with a gas from nozzles into a water tank receiving the perishables, when the deterioration syndromes of the perishables such as leaf vegetables are observed, and to provide a device therefor. SOLUTION: This method for activating the freshness of perishables, comprises jetting water accompanied by fine bubbles containing a gas comprising minus ions and ozone on leaf vegetables received in a water tank 21 in the horizontal direction from the lateral side and in the vertical direction from the bottom side to vibrate the vegetables. The device for activating the freshness of perishables, is obtained by disposing nozzles 4, 5 for mixing water with a gas comprising minus ions and ozone and jetting the mixture in the mutually facing lateral side directions and in the upper direction from the bottom side, disposing water tanks 17 having drainage ports 6 for controlling the level of water on both the right and left sides of the water tank 21, allowing the bottom portion of the water tanks 17 to communicate with the bottom portion of the water tank 21, and disposing a drainage port 28 at the bottom central portion of the water tank 21, in the water tank 21 whose upper portion is opened.</p>
