Arrangement and method for peeling oblong shaped vegetable or fruit having a substantially circular cross section like asparagus, black salsify, carrots and sweet potatoes. According to the invention, peeling is performed with a knife having a radius of curvature that is substantially equal to the cross-sectional radius of curvature of the vegetable or fruit to be peeled.
