摘要 PROBLEM TO BE SOLVED: To efficiently produce an isoflavone compound from a soy sauce cake. SOLUTION: The soy sauce cake heat-treated at >=105 deg.C is extracted with alkaline water and the resultant extract liquid is brought into contact with an adsorbent to adsorb the isoflavone compound in the extract liquid. The compound is then eluted with alkaline water and precipitated under acidic conditions to obtain the isoflavone compound.
