PROBLEM TO BE SOLVED: To provide a method of and equipment for hot storage that keeps smothered foods such as roasted jiao-zi, pizza-pie or the like in a state just after cooking. SOLUTION: The equipment for hot storage for smothered foods is provided with a chamber wall of a heat insulating wall sandwiching an insulator, a food storing chamber equipped with an electric heater in an inner wall, a steam generator in the food storing chamber, a humidity sensor on an upper side of the steam generator and a heating plate equipped with an electric heater. A temperature sensor that detects temperature and a heater control mechanism using a detected temperature are installed. The equipment maintains the temperature of the heating plate contacting with a roasted side of the smothered foods at 65 deg.C-95 deg.C, atmospheric temperature in the food storing chamber at 45 deg.C-60 deg.C and relative humidity in the food storing chamber at 60%-90% respectively. |
