PURPOSE: A process for preparing the titled red pepper oil having a sharp taste by using natural seasoning material is provided, which prevents economical loss by using both red pepper powder and seed and minimizes danger of acidification by reducing an acid number of red pepper seasoning oil. CONSTITUTION: This red pepper oil comprises 80 to 99.9% by weight of corn salad oil, 0.12 to 0.36% by weight of a paprika extract, 1.0 to 0.26% by weight of a capsicum extract and 0.1 to 15% by weight of red pepper oil directly extracted and or red pepper oil extracted with hot water. The red pepper oil directly extracted is obtained by heating parched red pepper powder with corn salad oil and the red pepper oil extracted with hot water is obtained by heating red pepper powder with corn salad oil and water at 120 to 125deg.C under internal pressure of 2.0 to 2.5kg in an autoclave.
