PROBLEM TO BE SOLVED: To attain correctly and easily the purpose of cooking of food materials and carry out reliably high temperature, high-speed cooking. SOLUTION: Characteristically, a cooking vessel 1, a gas heating device 3 for heating the bottom 13 of the cooking vessel 1, a heat exchange jacket 5 for supplying steam into the interior of a closed section to enable heat exchange to a wall, a medium supply and discharge means 7 for supplying and discharging steam from outside, a weight detection means 9 for detecting total weight of the cooking vessel 1 and the heat exchange jacket 5 side, a weight change memorization means 11 for memorizing a weight change in response to a change in the moisture content during heating as a reference value, and a drive control means 11 calculating a weight change in food ingredients put in the cooking vessel 1 from a change in total weight detected by the weight detection means 9 and controlling drive of the gas heater 3 and the medium supply and discharge means 7 so as to match the weight change in food ingredients with the reference value are provided. |
