PROBLEM TO BE SOLVED: To provide a fish Vienna sausage giving a moderate springiness to the tooth in the chewing of the sausage in hot state, having a softness to enable the biting off without force and giving a juicy deliciousness due to an oil and fat exuded by biting and provide a method for the production of the sausage. SOLUTION: The fish Vienna sausage is produced by mixing a vegetable oil and fat into minced fish meat at a prescribed ratio, stirring the mixture to disperse the oil and fat and filling the product into a sausage casing. |
