The invention concerns a refrigerating installation wherein the evaporator (1) is associated with at least a hold-over coil (20) comprising, at least a tubular, rectilinear (45) or coil conduit (22), which, integral with exchange fins, contain a liquid or solid cold accumulating material such as sodium chloride, glycol, alcohol, accumulating the frigories generated by the evaporator (8) to restore them, on request, when the refrigerating installation is off. In an embodiment, the evaporator (8) or the hold-over coils (20) are arranged in an isothermal compartment (25) run through by an oriented air flow (31) circulating first through the evaporator (8).
