The present invention provides a combination continuous and batch filtration system for a recirculating fryer (10) where the continuous filter (26) and batch filter (30) assemblies are integrated into a single unit (18), utilizi ng a common pump (54). This unit is substantially compact and is therefore able to fit within the frame of most recirculating fryers. The outlets (34, 44) o f the continuous filter (26) and the batch filter (30) are connected to a two- way valve (42), which is, in turn, connected to the inlet (52) of the common pump (54). The valve (42) allows an operator to selectively pump cooking flu id from either the continuous filter (26) or the batch filter (30) back into th e fryer vat (14).
