PURPOSE: A method for preparing cracker by adding aged Kimchi to the dough is provided to serve Kimchi flavored cracker without unpleasant smell of the Kimchi. CONSTITUTION: The method includes the following steps of: (i) preparing 100g of wheat flour, 10-60g of sugar, 10-60 of butter, 2-10g of baking powder and 1-5% of salt; (ii) grinding 10-100g of Kimchi of which pH is 3.0-6.0 and salinity is 1-5% into thin pieces and mixing the thin Kimchi with 20-100g of raw egg; (iii) kneading the prepared materials with the mixed Kimchi pieces and egg to have 1-6% of salinity; (iv) forming the dough into a cracker shape and baking the cracker.
