<p>Culture stock for edible fungi, is produced by heating the cellulosic substances, used for the basis of the culture and/or the industrial inoculant, contng. is not 50 wt.% moisture, and other complementary nutrients, at atmospheric press. under aerobic conditions, in the presence of thermophilic and thermotolerant micro-organisms at is not >70 degrees C., in order to encourage biochemical attack. The temp. is then reduced to 70 degrees C., in the range 45-58 degrees C. to encourage metabolism of the microorganisms whilst maintaining the other conditions constant. The stock obtained is resistant to metabolysis.</p> |
