SOLUBLE COFFEE WITH BOTH ENRICHED FLAVOR AND COLOR AND METHOD FOR PRODUCING THE SAME

PROBLEM TO BE SOLVED: To obtain a soluble coffee having both enriched flavor and color. SOLUTION: A method for enriching the flavor of a coffee extract by heating the extract at sufficiently high temperature for sufficiently long time for enriching both the flavor and color of coffee is provided. The 2nd objective flavor-enriched soluble coffee product is obtained by cooling a heated coffee and preferably evaporating it to dryness. In the above method, flavor enrichment of the soluble coffee can be conducted without getting coffee flavor harmful.
