PURPOSE: Provided is a fat and oil composition made from fat and oil containing highly unsaturated fatty acid and lipid of yolk, which prevents oxidation of highly unsaturated fatty acid and improves flavor of the fat and oil. CONSTITUTION: The composition is prepared by adding at least 25% of lipid of yolk containing 25-85% of lecithin to fat and oil containing highly unsaturated fatty acid such as fish oil comprising one or more fatty acid selected from the group of docosahexaenoic acid(DHA), arachidonic acid, eicosapentaenoic acid(EPA), γ-linolenic acid, dihomo γ-linolenic acid and palmitic acid. The constituents of the fat are similar to those of breast milk fat. More than 0.1% of the resulting composition can be added to dairy goods, various kinds of beverages, processed foods and candies.
